Ingredients
- 4 large sweet potatoes, peeled and cut into 1/2-inch slices or 1-inch cubes
- 60 mL Nature Nate’s 100% Pure, Raw & Unfiltered Honey
- 60 mL extra virgin olive oil
- 10 mL ground cinnamon
- 5 mL ground ginger
- 125 mL toasted pecans
Directions
Preheat oven to 190 C. Whisk together the honey, olive oil, cinnamon, and ginger and pour half of the mixture into the bottom of a baking dish. Lay the sweet potatoes in a single layer on top and pour the rest of the honey mixture on top. Roast for 30 minutes.
Place the sweet potatoes in a dish and add the toasted pecans to the baking dish. Pour over the sweet potatoes and serve.
