Honey Banana Muffins

We love tried and true recipes with honey, and none are more special than the ones passed down through generations. Somehow, they just taste better and instantly feel like home, and this one delivers just that. Courtesy of our teammate Liz and her beloved grandma Sweetie, here are some un-bee-lievable muffins that you must absolutely try.

Ingredients
  • 2 eggs
  • 1 ½ tsp cinnamon
  • 4 Tbsp unsalted butter
  • 1 cup mashed ripe banana (about 3 medium bananas)
  • 1/3 cup Nature Nate’s pure honey
  • ¼ cup milk
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups flour
  • 1 tsp vanilla extract


Directions

Preheat oven to 350 degrees. Spray muffin tin with cooking spray. Soften butter in bowl until it is room temperature. Add honey, mashed banana, vanilla, and milk to the bowl. Whisk together to combine. Add eggs and continue mixing. Sprinkle cinnamon, baking soda, and salt into the bowl. Whisk until well-combined.

Add the flour to the bowl and stir with a spatula until loosely combined. Be careful not to over-mix. Scoop the batter into the muffin tin. Be careful to fill about 2/3 full. Sprinkle the top of each muffin with a little cinnamon. Bake for 15-17 minutes.

Let muffins cool for 5 minutes. Eat, and enjoy!
