Lemon Poppyseed Quinoa Pancakes

  • 3/4 cup prepared quinoa
  • 3/4 cup oat flour
  • 2 eggs, beaten
  • 1 and 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 Tbsp lemon zest
  • 1-2 Tbsp poppy seeds
  • 1/2 tsp salt
  • 3 Tbsp Nature Nate’s pure honey
  • 3/4 cup milk (or non-dairy alternative)
  • 1 cup strawberries


Stir together all but berries and syrup until just combined. Heat a non-stick skillet and make pancakes, using about 1/3 cup batter for each. Serve hot with fresh berries and honey on top.
