No-Bake, Super-Charged Granola Bars

Fiber, potassium, and protein all rolled into a delicious no-bake bar – it sure beats another boring bowl of oatmeal! Pure, raw & unfiltered honey and dates add that indulgently sweet taste but have a low glycemic index so you won’t experience the same crash as with processed sugar. Make a batch of these at the beginning of the week, and no one will be reaching for the pre-packaged pantry snacks.

Preheat oven to 350. On a cookie sheet, toast oats for ten minutes (if desired). Warm the honey, salt, vanilla and nut butter together in the microwave until very warm. Mix well and spoon into food processor. Add dates one at a time until mixture is smooth. Blade will slow as dates are added, result is a very thick mixture. Spoon into a bowl and combine the oats and nuts while still warm. Press evenly into a parchment-lined 8×5-inch loaf pan. Chill for several hours. Slice into 16 bars.
