Coconut Cashew Truffle Bites

Coconut Cashew energy balls so tasty, we call ‘em truffles! Make these to share with a friend for Valentines. Or enjoy them as a pre-gym snack. Versatile and tasty!

Ingredients
  • 1 cup raw cashews
  • 5 Medjool dates, pitted
  • 2 Tbsp cashew butter
  • 1/2 teaspoon sea salt
  • 1/4 cup Nature Nate’s Raw & Unfiltered Honey
  • 1 tsp vanilla
  • 1 Tbsp coconut oil
  • 2 Tbsp golden flaxseed
  • 1/2 -3/4 cup toasted coconut, divided
  • 1/2 cup brown rice krispy cereal


Directions

In a food processor, pulse cashews, dates, cashew butter, sea salt, honey, vanilla, coconut oil, flaxseed and ¼ cup coconut together until a thick dough forms.

Add more coconut, as needed, until mixture is firm but not overly sticky.

Fold in krispy cereal, roll in coconut.
