Apricot Cherry Honey Oat Bars

Some mornings are busier than others, and it can be easy to think you should just skip breakfast. With these apricot cherry honey oat bars, you can make a whole batch on the weekend for easy-to-grab bars on your way out the door in the mornings. These are also a tasty afternoon snack or dessert. Try mixing and matching different fruit and nut options to add variety to your week!

Ingredients

Oat bars:

  • 1 1/2 cups rolled oats
  • 1 cup self-rising flour
  • 1 cup pecans, plus 1/3 cup
  • 1/2 cup butter
  • 1/2 cup Nature Nate’s Raw & Unfiltered Honey
  • 1/2 teaspoon salt

Fruit filling:

  • 6 ounces dried apricots
  • 6 ounces dried cherries
  • 1/2 cup NNRUH
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

 



Directions

Preheat oven to 350 degrees.

Process all oat bar ingredients except 1/3 cup pecans.

Press 2/3 of the bar mixture into a lightly greased 8×8-inch pan.

Bake for 10 minutes.

Remove from oven.

Process all filling ingredients until well combined and smooth.

Spoon gently and evenly over the crust.

Spoon remaining bar mixture on top.

Evenly distribute pecans on top.

Bake an additional 20-25 minutes, until golden.

Allow to cool.

Cut into 16 pieces.
