Our favourite brunch side is the Cauliflower Fritters with Citrus Honey Glaze. This country-fried fritter is similar to the puff in it’s ingredient list. However, it is very different in texture, method and result. It’s the puff’s country cousin and it's incredibly tasty.

Ingredients
- 2 cups finely chopped cauliflower
- 1/2 cup cornmeal
- 2 eggs, beaten
- 3/4 cup oat flour
- 1 teaspoon salt
- 1/3 cup Nature Nate’s Raw & Unfiltered Honey, plus 1/2 cup
- 1 tablespoon orange or lemon zest
- canola oil
Directions
Fill a deep skillet with about 1/4 inch deep canola oil and heat to medium.
Combine all but 1/2 cup honey and zest together.
Stir well.
This batter should be stiff enough to hold shape.
Measure about 2 tablespoons per fritter into the hot oil.
Pat each fritter with a spatula to make it flat.
When bubbles and crispy on one side, flip each fritter and repeat, about 4 minutes per side.
Watch carefully, and turn when edges begin to turn a very deep golden.
Add more oil when needed.
Drain fritters on paper towels and keep them warm in oven.
Stir cayenne and zest into remaining 1/2 cup honey.
Drizzle the honey mixture over the hot fritters on a platter.
Makes about 20 fritters.
