Wilted Dandelion Green Salad

If you’re looking for an absolutely delicious idea for dandelion greens, add this salad to your repertoire. Quick, simple, and absolutely bursting with the perfect blend of flavors, bitter greens are tossed with honeyed walnuts, earthy goat cheese, and sweet blueberries for a splendid salad which perfectly complements spring and summer grilling.

Ingredients
  • 1 bunch fresh dandelion greens (about 4 cups)
  • 1/2 cup blueberries
  • 1/2 cup goat cheese crumbles
  • 1/2 cup chopped walnuts
  • 2 Tbsp Nature Nate’s pure honey
  • 1/8 tsp cayenne pepper
  • 1 Tbsp olive oil
  • 1/2 tsp salt


Directions

In a large skillet, lightly saute the walnuts in the olive oil until they begin to brown. Add the honey, salt, and cayenne. Stir until the walnuts are just coated. Add the greens, and stir several times to slightly wilt. Spoon the greens onto two salad plates or bowls. Top with the berries and goat cheese.
