Apple Honey Frittata

Ingredients

For the Frittata:

  • 3 large eggs, room temperature
  • ½ cup low fat milk
  • ¼ cup heavy cream
  • 1 Tbsp Nature Nate’s pure honey
  • 1 Tbsp cornstarch
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 Tbsp unsalted butter

For the topping:

  • 1 Tbsp unsalted butter
  • 2 large apples, peeled and sliced into half inch thick pieces
  • ½ cup Nature Nate’s pure honey
  • 2 tsp fresh lemon juice
  • ½ tsp cinnamon (optional)
  • 1 tsp cornstarch
  • 1 tsp water


Directions

Heat an oven to 400 degrees. Place the butter in a small cast iron skillet and put in the oven to melt the butter and heat the pan for two minutes.

Meanwhile, whisk the eggs, milk and cream, honey, salt, vanilla, and cornstarch until well combined. Remove the hot skillet from the oven and immediately pour the egg mixture inside. Bake for 10 minutes.

While the frittata bakes, make the topping by heating the remaining butter in a sauce pan, adding the apples, honey, and lemon juice and sautéing until apples soften, a few minutes. In a separate bowl, whisk the cornstarch with the water, then add to the apples and stir until combined and the sauce thickens. Pour over the baked frittata and serve immediately.
