Blueberry Bacon Breakfast Bowl

This blueberry bacon breakfast bowl, with yummy sweet potatoes mixed with pan-seared chicken sausage, will give you the right start to your day. All the flavours of your favourite breakfast eats are turned into a quick, on-the-go breakfast.

Ingredients
  • 1/2 sweet potato, peeled and wedged
  • 1 Tbsp coconut oil
  • 1 clove garlic, finely chopped
  • 2 chicken sausages, sliced
  • ¼ cup Nature Nate’s Raw & Unfiltered Honey
  • 1 cup blueberries
  • salt and pepper


Directions

Microwave or bake sweet potato until tender.

Cool slightly and cut into cubes or wedges.

In a small skillet, melt coconut oil over medium heat, toss in garlic, cook for 30 seconds, then add sweet potato cubes and sausage.

Cook until sausage golden brown.

Transfer to serving bowls, top with blueberries.

Drizzle with honey.

Salt and pepper to taste.
