Everything-but-the-Kitchen-Sink Cookies

What do you do with a kitchen stocked with all kinds of ingredients? Ahhh, cookies of course. Whether you have flaxseed meal or hemp seeds, corn meal or quick oats, coconut or cornflakes, this everything-but-the-kitchen-sink recipe will make a delightful cookie with a sweet honey finish.

Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup Nature Nate’s 100% Pure, Raw & Unfiltered Honey
  • 1 egg
  • 1/3 cup flaxseed meal or hemp seeds
  • 1/3 cup cornmeal or quick oats
  • 1 1/2 cups self-rising flour
  • 1 cup chopped nuts, any kind
  • 1/2 cup coconut or cornflake
  • 1/2 cup dried fruit (raisins, craisins, dried blueberries, dates, etc.)
  • 1 cup chocolate chips (any kind…white chocolate, butterscotch, caramel)
  • 1/2 tsp salt
  • 1 tsp vanilla


Directions

Preheat oven to 325 degrees. Combine honey, butter, vanilla, salt, and egg. When creamy, add flour, cornmeal, and flax. Mix in remaining ingredients, saving a few chocolate chips, nuts, and coconut to decorate the tops.  Spoon mounds onto baking sheet with a small ice cream scoop. Bake 12-15 minutes until golden.
