Honey Kettle Corn Snack Mix

It takes a certain mature palate to truly appreciate the delightful combination of sweet & salty that is kettle corn. Let’s just say, if you know, you know. Homemade popcorn takes hardly any extra time and truly makes this snack mix pop. We love tying it up in a baggie with a pretty bow to share or hoarding it all for ourselves. It’s that good!

Ingredients

For the popcorn:

For the snack mix:

  • ¼ cup dried cranberries
  • ¼ cup dry, salted cashews
  • ¼ cup dry, salted almond
  • ¼ pretzel pieces


Directions

In a large stainless steel pot, add coconut oil and a few kernels, cover and set heat to medium high on the stove. Once the first kernels pop, quickly add the rest of the kernels, salt and cover. Shake vigorously and stay close to the stove. Once you can count to four without hearing a kernel pop, immediately remove from heat.

Place the popcorn on a baking sheet and evenly drizzle honey. Once cooled, toss to incorporate the honey into all of the popcorn, add the cranberries, cashews, almonds and pretzels. Taste and adjust salt if necessary.
