Pumpkin Spice Cake Balls

These aren't just for kids! Bring them to a fall festival or holiday dinner for everyone to enjoy.

Ingredients

Cake Balls:

  • 1/2 cup pumpkin puree
  • 1/3 cup Nature Nate’s Raw & Unfiltered Honey
  • 1 1/4 cups wheat germ
  • 1 1/4 cups finely crushed vanilla wafers (or graham crackers)
  • 1/3 cup almond butter
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Optional (for dipping):

  • 1 cup white choclate chips
  • 1 tablespoon coconut oil


Directions

Combine all cake ball ingredients in a large bowl.

Mix well. (Kids can take part here, using their hands.)

Scoop into round balls with a small ice cream scoop.

Chill.

If desired, melt chocolate chips and coconut oil just until chips lose their shape.

Stir well and dip cake balls in the white chocolate.

Skewer each cake ball with a craft stick to make cake pops.

Refrigerate.

Makes 1 dozen.
