Sweet Potato Marinara

With lots of vegetables and layers of taste, this marinara recipe will bulk up any pasta dish for you and your family.

Ingredients
  • 2 pints cherry tomatoes
  • 1 medium onion, roughly chopped
  • 1 medium sweet potato, cut into 1-inch cubes
  • 1/2 Granny Smith apple, roughly chopped
  • 1 tablespoon chopped garlic
  • 1/8 teaspoon red pepper flakes
  • 2 teaspoons Kosher salt
  • 1/4 teaspoon black pepper
  • 2-3 tablespoons Nature Nate’s pure honey
  • 1/3 cup olive oil
  • 8 ounces Baby Bella mushrooms, roughly chopped
  • 1/2 cup fresh basil, sliced thinly


Directions

Preheat oven to 375 degrees. Place all ingredients in a large roasting pan and toss together well to coat vegetables evenly. Roast for one hour, stirring several times to prevent burning. When vegetables are roasted and soft, place in a food processor with 1-1 1/2 cups hot water. Add basil and serve. Makes about 5 cups.
