Honey & Ricotta Toast

A little sweet and a little savory, this toast will not disappoint. Combine honey and pears with ricotta, lemon, and thyme, and you have fresh reason to enjoy toast everyday.

  • 1 large baguette
  • 16 oz whole milk ricotta
  • Zest from one lemon
  • 1 Tbsp fresh thyme (optional, can sub ½ tsp dried thyme)
  • ¼ cup Nature Nate’s pure honey, plus more for drizzling
  • ½ lb ripe pears (or peaches if in season)
  • Kosher salt for sprinkling


Slice baguette into one-inch pieces on the diagonal. Place on a baking sheet, and bake at 325 degrees for 10 minutes or until lightly toasted and browned. Meanwhile, whip the ricotta in a blender for two to three minutes or until fluffy and smooth. Add in the lemon zest, honey, and thyme, and whip for another 30 seconds.

To serve, smooth a dollop of ricotta on a slice of cooled baguette toast, and top with sliced pears or peaches. Drizzle with honey, and sprinkle with kosher salt before serving.
