- 2 pounds multi-coloured carrots, peeled, trimmed and sliced very thinly
- 1/2 cup mint, chopped
- 1/3 cup Nature Nate’s Raw & Unfiltered Honey
- 1/4 cup olive oil
- 1/4 cup cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon Sriracha sauce
Directions
Lightly steam carrots until they are slightly tender. Cool completely. Whisk together all remaining ingredients until well combined. Toss honey mixture with carrots. Chill until ready to serve.
